I am needing a recipe for broccolli soup. We love it but the last time I found a package and all I had to do was add the broccolli. It was ok but I want to make one myself, a good one so I can impress my boyfriend. Thx in advance if anybody has one. Lura

I have one that is made with cottage cheese - would you like that one? It is very good.

Chop up a head of broccoli, 1 med. potato, 1/2 onion and a couple of carrots, and boil them in a quart of chicken broth-you can add water if you need to. Homemade chicken broth is the best. I make my own with chicken backs-they are cheap. When veggies are cooked, drain them, keep the broth! Put them in a food processor and then return to the pan with just enough broth to make it thick. Add salt to taste and enough half and half to thin a little. You can also add grated cheese.

I make mine in a crock pot....but you have to be careful not to over cook.

Head of broccoli
crumbled bacon
Chicken stock
rice
cream
mushrooms
velveeta
onion


I put the broccoli, mushrooms, onions, chicken stock and bacon in the crockpot until veggies are tender.
Then I add the rest of the ingredients until the rice is cooked all the way through and the cheese is melted. It is thick kind of like a chowder and we love it!

Here's my recipe - or thereabouts! I rarely make it exactly the same, but this is the basic recipe my family prefers. Forgive the note; I am saving recipes for my daughter, and the notes are to her. Ignore the potato soup recipe at the top.

3 heads broccoli
1teas.minced garlic
2 cans chicken broth
1/2 cup chopped onion big chunk butter
4 cups milk
1 1/2 velveeta cheese
cook broccoli,onion in chicken broth until tender, place in blender with cheese&garlic. blend smooth(to suit).pour in pan,add milk, season and heat. When I blend, I do it in a couple batches, the hot broth will melt cheese . You can use half&half for milk, add some butter, and even use instant potatoes to thicken if you like a thicker soup.

Here is mine, it is really simple:

Cheesy Broccoli Soup w/ chicken

1 can cream of chicken soup
1 can crean of celery soup
1 can cream of onoin soup
3 soup cans of milk (I use fat free half & half)
1 stick butter, optional
2 lg. heads of broccoli,cut bite size(more if you like)
1 lb. Velvetta cheese (plain or Mexican)
1 medium onion, chopped
3 Chicken breasts, cooked, cut bite size

Mix all ingredients in crock pot or Dutch oven on low.

When our son was growing up, this was his favorite and it still is. I fix it for him every time he's home to visit:

CREAM OF BROCCOLI NOODLE SOUP

Saute: 2 Tbs. butter and 3/4 cup chopped onion
Add: 6 cup chicken broth, heat to boil
Add: 8 oz. narrow noodles (excellent w/spinach noodles)
1 Tbs. salt and dash of pepper
Add: 2 10 oz. pkgs. frozen chopped broccoli, thawed
Cook all for 3 min.(If using wider noodles, cook for 6 min.)
Add: 1 clove garlic, crushed
Add: 6 cups milk and 1 lb. Velveeta, cut up small
Heat 4 min to melt cheese. DO NOT BOIL.
(Note from Sharon: Soup to die for, I always use Spinach Noodles)

This broccoli soup was served at a restaurant in E. Lansing and my daughter got it from them. It is the best!!

BROCCOLI SOUP

3 T. chicken base
1/2 t. white pepper
3/4 c. diced celery
1 qt. half & half
1/4 c. parsley flakes
1-1/2 t. lemon juice
1 qt. milk

2 qt. fresh broccoli
3/4 c. flour
1/4 lb. butter
1/2 c. cooking sherry

Add first seven ingredients, on low heat - stir occasionally. Clean and cut broccoli - boil for 12 minutes until tender. Add immediately to mixture. Increase heat to medium high. Simmer and stir. Melt butter - mix with flour to get creamy mixture. Add to soup. Thickening should occur. When soup thickens - add cooking sherry. Mix well.
