Skinny Chunky Monkey Cookies...gluten free and low sugar
 
Here's a recipe for Skinny Chunky Monkey Cookies...gluten free....and low sugar...and DELICIOUS (kind of like no-bake cookies)

3 very ripe bananas
2 c oats
1/4 cup peanut butter
1/4 cup cocoa powder
1/3 cup unsweetened applesauce
1 t vanilla

Mash bananas; add remaining ingredients and mix well. LET SIT 20 MINUTES...drop by spoonfuls on ungreased cookie sheet, then bake in 350 degree preheated oven for 10-12 minutes.

Interesting....I do a no flour/no sugar diet so this would work if I can find a no sugar peanut butter. Thanks!

Thanks for printing this. One of my sewing buddies has Celiac and I am always buying gluten free desserts. It will be nice to make something for a change.

I buy sugarless peanut butter at Costco and at Kroger. Both are very good and contain only peanuts and salt! They do have to be stirred to mix in the oil that has separated, but then stays mixed when kept in the refrigerator.

I was told by a friend that oats are not gluten free so I had to check it out on line. It said that most oats can become contaminated by wheat either in the field if grown next to wheat or in the processing. To be safe you should make sure you buy gluten free oats.

Thanks for that info. Unfortunately neither of those stores are in the area here. Will check other sources, including regular grocery store, when I'm racing through crazed. I don't normally think of peanut butter as I don't do bread anymore and I'm not a fruit person either.

Thanks for the recipe KathyMarie! Sounds good. Although it is going to be almost 100 here today I may bake 'em anyway!

Many stores have a machine where you grind fresh or roasted peanuts right in the store. I do that here at Win-Co or PC Market of Choice.

Looks good! I'm going to give them a try! As for the p-nut butter - I buy Smuckers Natural at Walmart - only contains peanuts and a little salt!
