makes 4 servings

2 medium onions chopped...........................abt 1 cup
2 Tablespoons butter
2 cans 14 1/2 oz each chicken broth
2 1/2 cups water
2 lbs pumpkin peeled and cubed about 5 cups
1 teaspoon salt
1/4 teaspoon black pepper
1 cup milk

In a deep pot saute the onion in butter till golden
add broth, water, pumopkin, salt and pepper.........cook till pumpkin is softremove from heat and blend or puree, then return to pan
add milk and heat.........adjust seasonings to you liking

I've been wanting to make and try a pumpkin soup. Hubby is skeptical. :roll:

Mom got one of those pumpkin pie mixes in a box, like a cheesecake in a box....well...not too bad. Lots of pumpkin pie spice and a smooher texture, almost like pudding. It was good, but I will stick with baked pumpkin pie.
