Hello All,
I am a nanny for a 5 year old girl that has a very limited diet, she can only have gluten, sugar, lactose free. I am finding it very hard to find recipes that she can have.
Please I can use some help with this, Any ideas would be greately appreciated.

No Gluten, No Sugar and No dairy products unless it is lactose FREE.

My grandson is gluten/all dairy free. Go to Livingwithout.com I also subscibe to their monthly magazine which I share with his mom who is also gluten-free as well as his sister. Great articles of support and recipes.

Chicken Primavera

Chicken breasts, skinless & boneless (up to 6 depending on size of pan)
3 yellow summer squash, 1/4 inch sliced 1 zucchini (optional), sliced
1 large onion, sliced * 2 cloves garlic, crushed (optional)
1 14.5 oz. can diced tomatoes 2 Tbs. olive oil
1 tsp. granulated garlic 1 tsp. basil leaves
1 tsp. granulated onion 1 orange or red bell pepper, lrg. diced(opt)
1/2 tsp. oregano pepper
1 Tbs. parsley flakes 1 15 oz. can tomato sauce

Saute onion in olive oil on medium heat. When starting to soften add squash, zucchini, bell pepper & garlic. Sprinkle generously with granulated garlic, pepper & basil. Saute about 5 minutes. Add tomatoes with juice, stir. Put breasts on top, single layer, & sprinkle generously with granulated garlic & onion, pepper, basil, parsley & oregano. Pour tomato sauce over all. Cover & simmer 30-40 minutes. Serve as is or over cooked Rigatoni or other tube pasta or tortellini. Sprinkle with grated Romano or Parmesan cheese.
*If you don’t like onions, be sure to use granulated onion on the veggies & chicken for the added flavor. Dehydrated minced onion is another option.
Don’t let this recipe scare you, its really quite simple and all in 1 pot.

Yes! Betty Hagman's book is great and I always go to The Gluten Free Goddess site. She's the BEST!
