I pressure cook cauliflower (boiling or steamed is fine) and then mash it like potatoes. Add butter, seasoning and that is what I use to sub for mashed potatoes. I started adding a little to the regular mashed potatoes and kept adding more now DH will eat all cauliflower and not even blink an eye. He still has to have his fried potatoes every now and then.

I havent tried cauliflower mashed instead of mashed potatoes.
I have cut it in small pieces and cooked till med. firmness and use that instead of potatoes for making potato salad. its very good.

I get skim milk rocotta cheese. I add a teaspoon os powdered cocoa and a dab of vanilla. I also add a sprinkle of instant coffee grounds and a packet of Splenda. It makes a really tasty cream dessert that is very low fat and carb, and it is full of calcium

i like this site. use the enhanced search to find recipes.

you can select the main ingredient, then select low carb, and which ever publications you'd like to search.

many of the recipes give you all the nutritional data
