This was in a little book the teacher gave us in the 8th grade.
SAUCEPAN CHCOLATE COCONUT BARS
1 STICK (½ CUP) MARGARINE
1/3 CUP GRANULATED SUGAR
1/3 CUP PACKED BROWN SUGAR
2 TABLESPOONS WATER
1 CUP SIFTED FLOUR
1 ¼ TEASPOONS BAKING POWDER
1 EGG
1 TEASPOON VANILLA
½ CUP CHOPPED NUTS
½ CUP SHREDDED COCONUT
6 OUNCE PACKAGE OF SEMI-SWEET CHOCOLATE PIECES
Melt margarine in a saucepan. Remove from heat. Add sugars and water. Blend. Stir in flour and baking powder. Add egg and vanilla. Beat well. Add nuts, coconut, and chocolate pieces, and stir lightly to combine. Pour into pan, rubbed with margarine. Bake in a moderate oven (350’ F.) about 30 minutes. Do not over bake. Cool in pan. Cut into bars at serving time.
In the 8th grade, I was given an A+ by unanimous vote of the other girls in our home economics class. When Mrs. Wilder told me, I felt wonderful. Unfortunately, at the time, I still believed that I was allergic to chocolate and I did not get to taste them myself.
