Any ‘hard’ cheese that grates easily, preferably one with a strong flavour.
Here in the UK I use Cheddar.

I tried this last night. Yum. I only used half of the butter and it was delicious. I used shredded parmesan cheese as that is what I had on hand. I'll be keeping this one!

Sound wonderful. Thanks for sharing. A good way to use up leftover rotisserie chicken and a quick quick meal when you need something fast. Lots of possibilities with this one.
