Last night we had pork tenderloin made in the air fryer, mashed potatoes from scratch, roasted fresh carrots.
tonight we will work on the leftovers from the week. I really do enjoy making the "evening" meal, whether it is called supper or dinner. We call it supper.

I love pork tenderloin. I stock up when they are around $5 on sale! Broil it whole, slice into medallions, cut into 3 strands and braid with bacon, pound slices flat-ish for chicken fried with gravy....

Today, I am brining a whole chicken. This afternoon DH will spatchcock the bird and BBQ on the pit! Will pair with a salad.

Browned thighs with bones and skin and salt and pepper in skillet. Then put them on crockpot with big onion sliced, some potatoes scrubbed and cut into wedges. Added some carrot chunks put into the crockpot with some fresh garlic, 1 aww cups broth, 3 tablespoons of tomato
paste, a bay leaf some red pepper flakes. Cook until done and 20 minutes before done add half cup pitted prunes.

Steak tonight because whenever I ask my husband is there anything you want for supper he always says I'll grill us steak. . I'm have learned to love steak, no cooking for me. He would eat it every day. I ask him to grill extra so we can have stir fry and fajitas later in the week.
