    How about Swiss Chard sauted with a little garlic in oil. Sure is good as a side dish.

    I love to cook a combination of all of the greens together. It gives you a mixture of flavors. I start with a large onion, about 3-5 cloves of garlic and some bacon grease for breakfast along with enough water to cover the greens. Bring to a boil and then turn down to low heat and simmer til they are tender. About half way through the cook time I add a splash of apple cider vineger (this cuts some of the bitter taste that some greens have) and let it finish cooking. My grandmother use to add small red potaotes as well

    My mother used to make wilted greens. She would fry up a half lb of bacon to crisp, and then take the bacon out and put it on a paper towel, to drain, take out all but about two tablespoons of the oil from the pan, and then she would add the greens and cook till wilted but still bright green. just before serving she would chop up a couple of hard boiled eggs and sprinkle over the top. Yummy!!!! Oh I haven't had that in years and years. Can hardly wait till growing weason comes again and we have our own fresh veggies again.

    If you are cooking collard greens wash them well and cut in about 2" strips and put in enought water to cover with salt and pepper, 1/4 to 1/2 cup sugar depending on how many you are cooking and season with bacon drippings. You can also throw in 3 or 4 strips of bacon fried crisp and crumbled up. This serves up well with a good pan of cornbread. Now I'm hungry.

    Don't leave out the red pepper flakes- they are important!

    You definitely will love that them and they are even healthy. Don't forget to make some cornbread muffins to put in the bottom of your bowl to get all those nutritious juices! Kale - try food network Rachel Ray uses it a lot. Bok choy - saute one onion in olive oil until soft, add 1-2 cloves garlic and then the chopped bok choy and cook til soft.

    I grew up eating greens :D ..Here is my recipe for things like mustard greens, turnip, collard greens..My Kids LOVE them..I buy 2 bunches at a time and cook them and its still not enough to go around....You put your greens in a pot, fill it to about half way with water..Add your salt (to your taste or want) , a tad bit of veg.oil ( usually a couple of drops)..Add about two teaspoons of sugar..When the greens cook down, stir it and taste them..If needed add a touch more of either salt or sugar to taste..and cook for a little longer till greens are tender..
    Yes ! this is the way to do it. yummy!

    I always add a little baking soda to my greens to help them keep their bright green color, and smoked turkey for flavor instead of bacon or ham.

    how about olive gardens Zuppa Toscana soup
    • 1 lb Italian turkey sausage
    • 2 large russet baking potatoes, sliced in half,and then in 1/4 inch slices
    • 1 large onion, chopped
    • 2 cloves garlic, minced
    • 2 cups kale or 2 cups swiss chard, chopped
    • 2 cans chicken broth
    • 1 quart water
    • 1 cup heavy whipping cream
    Directions:
    Prep Time: 20 mins
    Total Time: 1 1/2 hrs
    1. Cook sausage in a 300°F oven for approximately 30 minutes.
    2. Drain sausages on paper towels and cut into slices.
    3. Place onions, potatoes, chicken broth, water, garlic in pot, and cook on medium heat until potatoes are done.
    4. Add sausage
    5. Salt and pepper to taste.
    6. Simmer for another 10 minutes.
    7. Turn to low heat.
    8. Add kale and cream.
    9. Heat through and serve.

    I have a friend who makes spinach casserole, (so do I now.)

    Greens Baked with Cheese
    Chop 4 or more cups spinach or other greens.
    mix with grated cheese (any variety you like) and spices of choice. (amount varies by quantity of greens, but you are looking to make it roughly half and half looking) {Cheese and greens, not the spices}
    Break 2-3 eggs into mixture and mix some more.
    Pour into dish that has been sprayed with cooking spray.
    Sprinkle more cheese over top.
    Cover with lid or tin foil.
    Bake in 350 oven until shrunk by half. Approx 30 mins?

    I'm sorry this is not more exact, but it is a dish that works better using your eyes.
