    Our Thanksgiving is a bit untraditional. I serve Prime rib, potato (how prepared changes), sweet corn (frozen from the garden), Cranberry orange relish (I am the only one who eats it, not sure why I do it), salad (someone else needs to bring), Cold Water biscuits (my grandmother's recipe that is actually a yeast dough), various pies (made from scratch). I like to try new recipes so something else may find its way into the mix.

    The prime rib is very expensive. We farm and I look at it as a treat for everyone who works so hard. I will still buy a turkey and freeze it for later use.

    I like to cook so I have no problem making things from scratch. I make in advance what I can and freeze it to cut down on time. I do ask my sons and families to bring something to the meal.

    I also ask them to help with cleanup. I grew up that everyone helped with cleanup at holidays and I was appalled when I married my husband and found out I was the only one who ever helped his mom.

    Some people have large groups and some are small, celebrate in a way that works for you. It is a time to be thankful for what we have and not be stressed over a meal or the dynamics of the group. Sometimes, it is also time to pass the torch and let others take care of it.

    Here you go. It has a wonderful fresh taste that brightens a meal.

    Fresh Cranberry Orange Relish
    1 unpeeled orange, cut into pieces
    1-12oz bag fresh cranberries
    ¾-1 cup Sugar

    Place cranberries and the orange pieces in food processor container. Process until mixture is evenly chopped. Transfer to a bowl. Stir in sugar. Store in refrigerator or freezer.
    Makes about 3 cups.
    NOTE: May also be prepared in a food grinder.

    Yes, it is the whole orange and you grind everything together. I do try to find an orange with a thin pith.

    This year I am going to do the "bag" way of roasting the turkey. The turkey seems to be more moist that way.

    We are frying our turkey, Last year, after the holiday, we reused the fryer to deep fry chicken thighs. Amazing! BTW, I researched cooking oil temps and decided to use vegetable oil instead of the pricey peanut oil. Works just fine at 350 degrees.
    I recently saw, on GMA, gingerbread muffins with cranberries. Soooo, I am trying to add cranberries to my Molasses Cookies recipe! Will report findings from experiment. I'm gonna make them today!

    Don't add cranberries to Molasses Cookies. The sweet from the cookie made the crans taste not sweet.
    Also, not making the carrot cake, subbing pumpkin for carrots, again. Moist, but needed more spices, for me.
    Today's experiment was going to sub pumpkin for banana in the Hummingbird Cake recipe, but it is close to the carrot cake, so not gonna try it today.
    I remember adding cranberries to my pumpkin bread recipe one year. I think I'll do that today.
    Also, injecting the bird tonight with the brine mixture. Anyone else injecting a bird?-share method!

    Mega Moist Double ChocolateBanana Bread

    1 stick butter, room temperature

    1/2 cup brown sugar (light or dark), packed

    1/2 cup granulated sugar

    1 Tbsp. real vanilla extract

    2 large eggs, room temperature

    1/2 cup cocoa powder, unsweetened

    3 ripe bananas, mashed

    2 tsp. baking powder

    1 tsp. baking soda

    1 tsp. sea salt

    1 3/4 cups all-purpose flour, sifted

    3/4 cup hot water

    1/3 cup dark chocolate chips

    To garnish top: mini chocolate chips, to cover top well

    "In bowl with electric mixer with paddle attachment cream butter, brown sugar, sugar and vanilla at medium speed until light and fluffy, 5 minutes. Scrape down sides and bottom of bowl. Add eggs and mix for 1 minute more or until well combined. Then add cocoa powder, mixing until smooth. Add the mashed bananas, baking powder, baking soda and salt and mix on low until completely blended. Gently fold in flour until barely combined, this do with a spatula by hand. Dump in hot water and whisk to combine, add the 1/3 cup chocolate chips and stir lightly to combine. Set aside for 10 to 20 minutes while preheating oven. When oven reaches 350 degrees, grease a 9 x 5" loaf pan then line with parchment paper letting excess fall over two long sides of pan. Pour batter into pan, sprinkle with mini chips and bake in center of oven for 60 minutes or until edges are set and middle is puffed up and cracked down center. Let sit 10 minutes to cool, then using parchment overhand pull bread out of pan and let finish cooling. It is delicious!"


    I made this last night, but didn't use the parchment and used 9 by 13 pan. De-li-cious.
