What works best for me, is, not to put any batting inside Placemats. Makes the glasses stand straight!

Insul-Brite hands down. Adds a bit to the cost, but with something you or the giftee will be using a lot, it's best to go for the best. You can use any amount of quilting that appeals to you.

I have used warm and natural 1005 cotton and I also like flannel. If you use flannel, wash and dry it before putting it in anything. It shrinks lots more than the other cotton. Ask me how I know?!?!

I just use a couple layers of muslin. This keeps it flat enough so nothing tips and you can wash and dry. Sometimes a quick iron, but not much.

I use Dream Cotton; really great & doesn't shrink like warm & natural.
