Sugar Free Lemon Filling?

Lemon dessert is a must in our house! DH and love lemon meringue pie,sauce, pudding, you name it.
Since we both are diabetic I had to find a way without the added sugar.
I purchase Jello lemon cook & serve pudding and pie filling. I use splenda for the sugar in either pie or pudding. When makeing sauce, I don't add the eggs. Comes out perfect every time. If you want it tangy, add a teaspoon of lemon extract.

The Jello Cook and Serve pudding I used Saturday did not come with sugar added. I got it at Meijer's, a local big box store. WalMart and Glen's have it, too. I like MyTFine better, but it's a little harder to find. A splash of lemon juice does help - either fresh or Minute Maid frozen.

Please be careful of the Jello pudding mix. Even though you add sugar to the recipe on the box, it "does" already have sugar. In fact there are 7 grams of sugar per serving, right out of the box.
The second and third ingredients are sugar products. As far as i could find, there aren't any completely sugar-free lemon puddings out there.

Thanks, everyone, for your input. Walmart is so far from my house that it's not worth traveling that distance just for lemon filling! But I googled sugar-free lemon meringue pie and sugar-free lemon curd, and found a treasure trove of good-sounding recipes, so as soon as I buy some fresh lemons, I'm going to try one of them. Thanks, again.

If you can find a Watkins dealer, they have a cannister of lemon pudding and pie filling mix that you add sugar to. However, I use it with Splenda and it comes out great. A quick chiffon pie:2small packages Sugar Free Lemon Jello Dissolve in one Cup of Crystal light lemonade (boiling hot).Refrigerate until just jelled. Beat in 1 or 2 containers of lite lemon yoghurt and one 8 oz. tub lite Cool Whip. Pour into graham cracker or your favorite crust. Chill unti firm. Can't give you the exact sugar count as it will depend on your yogurt and Cool whip but you can get it pretty low and noone knows it is "diet" & everyone wants the Recipe.
