    Here is a Pumpkin Cobbler recipe from Gooseberry Patch and I've made it three times in the last month. Lots of requests for the recipe. And so easy

    Pumpkin Cobbler

    3 eggs, beaten
    15 oz can of pumpkin
    12 oz can evaporated milk
    1 cup sugar
    1/8 tsp salt
    1 1/2 tsp cinnamon
    1 tsp ground ginger
    1 Tbl vanilla
    18 1/4 oz pkg yellow cake mix
    1 1/4 cup melted margarine or butter
    1 cup chopped nuts (I used pecans)

    Mix the first 8 ingredients together, pour into an ungreased 9 x 13 pan. Sprinkle cake mix over the top; drizzle with melted butter or margarine. Bake at 350 degrees for 25 minutes; top with nuts. Bake for an additional 15 minutes. Makes 15-18 servings.

    pumpkin cobbler

    1 cup sugar

    2 cans pumpkin
    1/2 tsp. ground ginger
    1/4 tsp ground cloves
    2 tsp cinnamon

    1 butter pecan cake mix
    1/2 cup butter, melted

    mix sugar, eggs, pumpkin, spices, milk
    grease 9x13 inch pan and pour the mixture into it. sprinkle dry cake mix on top of pumpkin mixture. pour melted butter over cake mix. sprinkle with shopped pecans if desired.

    bake 350 for 50-60 minutes or till knife comes out clean. serve warm........also very good cold!

    Here's one that someone posted on the QB some time ago and I won't be able to make it very often because I will eat the entire pan!!!


    Pumpkin Crumb Cake
    Batter
    ■1- 15 ounce Can Pumpkin
    ■2C sugar
    ■1 C milk
    ■2 C self rising flour
    ■1 stick margarine
    ■2 eggs
    ■1 tsp vanilla
    ■1 1/2 tsp Cinnamon
    Crumb Topping
    ■1 stick (1/2 c) Margarine
    ■1 Cup brown sugar (dark or light)
    ■1 cup flour (self rising or plain, whatever you have on hand)
    ■1 Cup oats (quick or old fashioned)
    Spray 9×13 inch pan with cooking spray. Place all batter ingredients into large mixing bowl. Mix until well blended.

    In medium bowl, place all topping ingredients. Cut together with a long tined fork until well blended. Pour 1/2 of batter into pan, top with 1/2 crumb mixture. Pour remaining batter over and top with remaining crumb mixture. Bake for 45 minutes to an hour at 350.

    Cake is done when toothpick inserted in center comes out clean.

    Pumpkin Drop Cookies
    1 1/4 C light brown suger
    1/2 C butter
    2 beaten eggs
    1 1/2 Cups cooked pumpkin
    1/2 tsp salt
    1/4 tsp ginger
    1/2 tsp nutmeg
    1/2 tsp cinnamon
    ---- 2 1/2 C flour
    ---- 4 tsp baking powder

    1 tsp lemon juice
    1 C raisins
    1 C chopped nuts
    Cream together butter and brown sugar. Add eggs, pumpkin, spices & salt. Sift Flour and baking powder together, then add into butter mixture. Add lemon, raisins, and nuts. Mix well, drop by teaspoonfuls onto greased cookie sheets. Bake at 400 F. for 15 mins. Makes 3 doz. Recipe from "The Pumpkin Man" Gene Rhodes, Kalamazoo, Michigan
