that defiantly looks like a C, that is how I have embroidered the C for my "Mc" name.
but it dosent make any sense unless the middle letter is an M

I think the little c is key.

There are also names that begin with Nc, rather than Mc.

But, I don't see any on this list that are NcJ

I agree with Carol....it very well could be a F, my Mom used to make her cursive "F" that way! It is very special, beautiful!

I've never encountered or seen an Nc-name before.

I wonder if many were changed to Mc's as folks went through Ellis Island and other immigration portals here in the US.
Weird things happened to other European names as well during that process.

Would they have been pronounced "Nic"Dermott?

Did any one think it was a little odd that a quilter would put their name in the middle of a quilt, rather than in a corner or back....IMHO the momogram in the center was the name of the person that the quilt was made For not made by....

I though it looked kind of like FNN. Very pretty!

Also assumed it was monogram of the recipient and not the quilter.

It does look like FNN until you look at the date. It's upside down. Turn it right side up and it looks like NNJ.
