making my sister's recipe, Poor Man's Lasagna. Italian bread torn into small pieces, soaked in tomato juice or sauce. Saute some onion, garlic, peppers, mushrooms, Italian sausage, whatever you have. Add some more tomato sauce or pasta sauce to the pan. Layer in casserole, bread, mozzarella cheese, sauce, repeat. Put foil on top, bake at 350 for about 45 minutes. The more cheese, the better. Also if you can get your hands on some Ajvar (roasted pepper/eggplant spread) that makes it really good.

Our daughter wraps homemade burritos in plastic wrap but instead of tucking the ends, she twists them so it’s easy to find the ends to remove the plastic wrap before going into the oven.
I made burritos like she did and froze them so I defrosting them in the refrigerator. I bake them 20-25 minutes in the oven with sauce and cheese on top.
