I am in the process of making a variation of log cabin quilt using 1-1/2" strips. No problems at all. It is called Heartstrings, Log Cabin Fever book by Evelyn Sloppy.
I have used 1" strips for sashing and had no problems, just cut strips as you would any other size strips.
    Nothing to it.

I use inch and half strips in the sweatshirt jackets and vests I make. It looks better than larger strips unless making jackets for a larger person. Haven't used any thing any smaller.

I am completing a log cabin done with 1 1/4" strips....took a long time to cut them, but sewing was no more difficult than wider pieces. I found that spraying fabric with starch just prior to cutting it helped...a LOT! .

    It looks good.

I know people say using strips is easy but cutting them and cutting again and matching up kind of makes me nervous...
I am not a precise cutter or precise anything else for that matter. I use the June Tailor shape cut. You can buzz through strips in not time. Perfect strips. I haven't tried it, but it's a versatile ruler and u can do a variety of shapes. I would think its like sashing.

Give it a try, do one block, by the end of the quilt, the next quilt will feel huge!! This is one inch finished squares. Crazily, I did not even think of strip piecing, cut 1.5" squares, mixed hem up in a paper bag, pulled out one square at a time and TADA!!

I made a scrappy queen sized log cabin using 1 1/2" strips. Obviously took longer but was not difficult at all.

I have done the rail fence and the log cabin with 1 1/2 " strips, not hard at all.

Check out the work of Ann Brauer. She uses extremely narrow strips in a quilt-as-you-go type style all her own.
